The aerobic oxidation of unsaturated fatty acids and their esters: cobalt stearate-catalyzed oxidation of linoleic acid.

چکیده
The connection between metal catalysis and the initiation step in autoxidation is emphasized. The formation of free radicals occurs in reactions involving not only various valency states, but also oxygen-complexes of the catalyst. The kinetics of the initial phase of the metal-catalyzed aerobic oxidation of linoleic acid are examined in detail, and a number of mechanisms postulated. The rate constants for certain initiation reactions are evaluated together with the corresponding activatian energies. The observed values are found to be in fair agreement with theoretical considerations and, in general, the evidence lends further support to the hypothesis that trace-metal catalysis and the initiation of autoxidation are intimately connected.

Long Chain Fatty Acid Acylated Derivatives of Quercetin-3-O-Glucoside as Antioxidants to Prevent Lipid Oxidation
Flavonoids have shown promise as natural plant-based antioxidants for protecting lipids from oxidation. It was hypothesized that their applications in lipophilic food systems can be further enhanced by esterification of flavonoids with fatty acids. Quercetin-3-O-glucoside (Q3G) was esterified individually with six selected long chain fatty acids: stearic acid (STA), oleic acid (OLA), linoleic a...

Background: For understanding the roles of fatty acids on the induction of acrosome reaction which occurs under association of cholesterol efflux and PKA or PKC pathways in boar spermatozoa, metabolic fate of alone and combined radiolabeled 14C-oleic acid and 3H-linoleic acid incorporated in the sperm was compared, and behavior of cholesterol and effects of PKA and PKC inhibitors upon fatty aci...
متن کاملMechanism and kinetics of the hemin-catalyzed oxidation of linoleate in the oil-water interface.
The purpose of this investigation was to find out why hemin catalyzes the oxidation of linoleic acid or its esters by O2 only in the biphasic oil-in-water system but not in homogeneous solutions. We find that only those molecules of linoleic acid or methyllinoleate which form a monomolecular ti at the oil-water interface react with hemin and OZ. The high affinity of hemin and hemoglobin for the...

The surface wettabiJity and fats of yellow bird1wood were examined in an attempt to illustrate how heat-induced d1anges in wood fats might be related to d1anges in surface wettability. A marked reduction of surface wettability accompan;ed heating of yellow birchwood. The degree of water repellency imparted to the waod was highly dependent upon heating temperature and time. Acetone extraction of...
متن کاملA peroxygenase pathway involved in the biosynthesis of epoxy fatty acids in oat.
While oat (Avena sativa) has long been known to produce epoxy fatty acids in seeds, synthesized by a peroxygenase pathway, the gene encoding the peroxygenase remains to be determined. Here we report identification of a peroxygenase cDNA AsPXG1 from developing seeds of oat. AsPXG1 is a small protein with 249 amino acids in length and contains conserved heme-binding residues and a calcium-binding...
